Calico Jack Cheese is a blend of Colby and Monterey Jack cheeses. This creates a wonderful blend two very popular mild flavored cheeses. Colby cheese has a similar taste to cheddar cheese, though it’s made with a washed-curd process rather than with a cheddaring process, giving it a milder flavor and moister texture. Monterey Jack originated Monterey, California and to produce a semi-firm, creamy, mild-flavoured cheese from cow’s milk which was aged for a sort period.
