Wood Cheese Girolle
A “girolle” is a cheese scraper, traditionally used with T̻te de Moine, to create perfect cheese rosettes. The cheese is placed on the center of a platform over a steel rod to keep it in place. Then a sharp blade is turned like a crank scrapping off the top layer of cheese and forming the rosette – beautiful little curly cues of cheese. The rosettes are great eaten as part of a cheese platter or as a garnish for almost any dish or appetizer. The girolle can also be used with most circular hard cheeses.
